My Easy Go-To Kale Salad

Anyone #mealprepping today? I bet you didn’t think you could prep salad, but when you use kale, it’ll hold up all week! That’s just one reason to make this kale salad. Other good reasons:

1 bunch of kale- washed and cut into thin strips

1 lemon juiced

1 clove garlic minced

1 shallot diced

1 tsp Dijon mustard

1-2 tsp sea salt to taste

1/2 cup olive oil 

Grab a big salad bowl. Add lemon juice, garlic, salt, mustard, shallot in bottom of bowl. Whisk in olive oil and taste for seasoning. Add more salt as needed. Throw in kale and using clean hands, massage kale. Yes, massage the kale with the dressing. Taste for seasoning. Add a protein and you have a meal.
