Think you can't have delicious creamed spinach on the Paleo diet? THINK AGAIN!! Make this at home or simply order it from Paleo On The Go.
All you need is:
- 2 lbs fresh spinach, washed and drained, roughly chopped
- 1/2 cup coconut cream (or the cream from a 1 can of coconut milk)
- 2 cloves garlic, minced
- 1/2 onion, diced
- sea salt to taste
- 1/2 tsp nutmeg
- 1 Tbs grass-fed ghee
Steam or sauté your spinach. (If you steam it, once it's fully wilted, remove from the pan and squeeze out any excess water. This is ESSENTIAL. Sautéing usually removes most of the water.) Remove from pan. Heat ghee in pan, sauté onions until translucent. Add in garlic, coconut cream, nutmeg, and dash of salt. Mix. Add in drained spinach. Taste for seasoning. Add more salt if necessary. Serve and enjoy! It's a great source of good fat and nutrient-dense veggies.
