I used to eat hummus ALL THE TIME and I never once thought about how it made my stomach hurt! Those garbanzo beans did a number on me. It wasn't until I learned about how hard legumes are to digest that I finally put two and two together and stopped eating it. I do love the great Mediterranean flavor though, so I am pumped that cauliflower can easily take the place of the beans. It tastes great! Here is the lowdown:
1 head cauliflower, washed, cut into smallish pieces
8 oz tahini
3-4 garlic cloves
juice of 2 lemons
2 tsp ground cumin
sea salt to taste
Steam cauliflower until tender. Once it's tender, drain out any excess water. Then sauté in the pan until the cauliflower is drier. In your food processor or using your immersion blender, blend the cauliflower, garlic, lemon juice, cumin, tahini, and sea salt together until smooth. It should be tangy, garlicky, earthy, and delicious.
